After moving to Auckland as a student, she has taken on the challenge to replicate some of her favourite dishes that she can remember her mother making, as authentically as possible- with only pantry staples. Making these dishes transports her senses back to her mother's kitchen, leaves her heart full and her tongue happy! She wishes to share this joy with you, with her favourite Potato and Pea Curry. This curry can be eaten with rice, bread or even mixed in with pasta to make a totally inauthentic but delicious pasta dish. Hope you enjoy!
Potato and Pea Curry (Serves 2-3)
Prep time: 15 mins Cook time: 30 mins Total time: 45 mins 2 tbsp vegetable oil 1 tbsp cumin 1 medium onion (finely chopped) 2 medium tomatoes (finely chopped) 1 tsp garam masala 1 tsp coriander powder 1/2 tsp cumin powder 1 tsp ginger
1 tsp garlic 1 green chilli sliced 1 tsp paprika powder 1 stick cinnamon 4 cloves 1 bay leaf 2 medium potatoes diced 1 cup green peas 2 tbsp cream (can substitute with coconut cream) 2 tbsp chopped coriander/cilantro leaves Salt to taste 3 cups of water
Whole spices can be replaced with ground-up spice
Spice mixture can be replaced with curry powder/ allspice powder
Peas can be replaced with any canned beans or corn
Instructions
Heat the oil and add cumin to slightly brown it
Then add the cinnamon stick, cloves and bay leaf and roast for 10 seconds
Add chopped onion and sauté until it is slightly translucent, add tomatoes and salt and allow the mixture to cook until it is slightly soft
To the mixture, add ginger garlic paste and the spices and cook the mixture until the oil separates from the spice (Do not add water)
Once the mixture is cooked, add potatoes and peas and mix it in while stirring for 2 mins. Add water and cook for 17 - 20 mins
Add water if you want a runny curry
Before turning the heat off, add cream and coriander leaves and cook on low for 2 mins
Serve! Delicious, authentic curry.
